Seitan Cacciatore

2 tablespoons olive oil

1 (16-ounce) package seitan, cut into bite-sized pieces

1 large onion, chopped

1 red bell pepper, seeded and chopped

1 green bell pepper, seeded and chopped

4 cloves garlic, minced

1 (28-ounce) can diced tomatoes

1 cup Vegetable Broth (see recipe in Chapter 4)

2 tablespoons soy sauce

1/2 cup white wine

1/4 teaspoon black pepper

2 tablespoons cornstarch, dissolved in 2 tablespoons water

1/4 cup chopped fresh basil

1. Add the olive oil to a large sauté pan on medium heat and sauté the seitan for 3–5 minutes. Add the onion, bell peppers, and garlic, and sauté for an additional 3 minutes, then transfer to a 4-quart slow cooker.

2. Add the tomatoes, Vegetable Broth, soy sauce, white wine, and black pepper.

3. Cover and cook on low heat for 6 hours.

4. With a slotted spoon, remove the seitan from the slow cooker and set aside. Whisk in the cornstarch mixture until it creates a sauce consistency. Pour the sauce over the seitan. Garnish with the chopped basil before serving.
